Every year I seem to have courgettes that grow into marrows and here is a great way to use them. 1 kg peeled and thinly sliced marrow steamed until it is clear. Whizz the courgettes in a food processor and add 125 gm butter, I kg sugar, zest and juice of 3 lemons, bring to the boil and simmer for 30 minutes. Bottle in sterilised jars. Better than lemon curd really because it keeps like jam and is delicious on pancakes or pikelets with whipped cream. We had a staff meeting at work today and I made a batch of pikelets with this and whipped cream - yumm!!!!
