Jelly making

Autumn brings natures harvest and like many creative and eco explorers I like to use what is available locally. Each year I dehydrate lots of apples and grapes to use in my home made muesli. From the skins and cores of the apples I make apple jelly. Not so healthy with the sugar content but very yummy. Here is the jelly bag dripping in my bath tub - almost ready to boil up and make the jelly. The important thing is not to squeeze the bag so that the jelly stays translucent and doesnt go cloudy. Apples with dark red skins make the nicest coloured jelly with no need for artificial colouring.
